Executive Chef – Avani+ Luang Prabang

Description: Avani+ Luang Prabang is hiring an Executive Chef (full-time, mid-senior level, hospitality). About Avani: vibrant social spaces, stylish rooms that simply work, and honest, locally inspired food, with an upbeat service culture that respects the art of hospitality. Planning and organising - Take part in preparing and implementing the hotel's strategic plan. - Plan the yearly food revenue and profit target. - Work with hotel management on all aspects of kitchen reinvestment. Operations and product quality - Analyse local-market needs and trends and lead the definition of the hotel's overall Food & Beverage offering. - Manage menu preparation and pricing in line with the hotel's and brand's F&B objectives. - Develop new menus and food items to meet guests' tastes, with sensitivity to local cultural traditions and religious beliefs. - Manage the preparation and presentation of food to ensure quality at all times; monitor guest satisfaction. - Minimise wastage and over-production. - Support Task Force Missions for the opening of new Minor Hotels and other MINT properties, and special events catered by Minor International. Departmental leadership - Direct and coordinate the daily activities of all the hotel's kitchens and make sure the kitchen team knows the F&B strategy. - Coach new team members and provide orientation, training and development. - Liaise with HR on recruitment and interviewing. - Control payroll and business expenses of the department. - Manage relationships and contracts with suppliers. - Support staff participation in local, national and international competitions. Health, hygiene and safety - Maintain the highest standards of food hygiene and all health and safety standards; report and correct hazards. - Liaise with the Chief Engineer on maintenance of equipment and fire equipment. - Ensure proper storage of raw and processed food, including freezers. - Instruct staff on emergency measures and keep a first aid kit stocked in the kitchens. - Keep all kitchen work areas tidy and clean. Marketing and guest relations - Attend guest and official functions as a representative of the hotel.
